Operating a dough presser while working for a restaurant is a full-time commitment. However, it’s equally important to keep and maintain a commercial-level machine, which takes training and practice. You will need to practice using it daily to know what to look for and what precautions to take while cleaning and preparing it for operation. Here are three tips to clean your commercial dough presser correctly to get a head start and keep it running in ship shape.
Remove Debris Daily
Although you might not be able to see it in plain sight, your commercial dough press machine can have buildup from frequent use. This is true for any frequently used appliance. You should get in the habit of wiping down all the hard surfaces daily to prevent the buildup of debris, dust, and sediment from flour and particles that might get stuck to the machine.
Breakdown and Detail
To take things a step further, you’ll need to set up a protocol and procedure for how often you should completely break down the machine to clean it thoroughly. This will require a brush, soap, and water.
Break down all the large parts first, and then let them soak in hot, soapy water for at least ten minutes before scrubbing them while they are in the wash. Then, rinse them in clean water and let them sit on a dry surface that is well aerated.
This will help them dry quickly without potentially retaining water. You will have to wash and dry smaller pieces by hand. Once you have completed this process, reassemble the machine and turn it on to see if it still operates well, and you’re all set!
Clean and Grease
The last thing worth mentioning is if you notice your machine acting up or making strange noises, cleaning might not be enough. Although you’re keeping a cleaning regimen for the machine, you will also need to lubricate the internal parts that keep it moving. This means making sure those parts are greased before reassembly.
