These disks are a good sized plate for the AE-VS12NH. The slicing disk option would be ideal for slicing thin cucumbers for a Korean/Greek style cold salad. We like the heavy duty feel of the assembly. Originally, we were quite excited to see an 'adjustable' disk - definitely an innovation. However, it turns out that the adjustments are manual and time consuming. You will probably need protective gloves, as we found the blades too sharp to handle alone on the slicing disk. In order to change the slice sizes on the slicing disk, spacers have to be added after unscrewing 4 small screws holding the stainless steel blades in place. We recommend setting the thickness and not changing it. If your operation truly has a need for multiple slice thicknesses, we recommend getting multiple disks. In the long run, it will save you a lot of headache. We think the AE-VS12NH line is a good affordable option for most restaurants. These disks are a reasonable price for the quality you are getting. Plus, there are quite a few applications. For example: cheese for pizzas, cabbage for cole slaw, lettuce for tacos. Please note that we are NOT able to change the shred sizes on the shredding disk once you use the disks. If looking to shred hard cheese such as parmesan, we recommend using the V12 Grating plate, not the shredding plate.
